This may look obvious,but,some people say gerbils are herbivores,because they have flat molars (totally flat molars,not like hamsters that have molars with well-defined cusps) also in some subreddit they said they are mono gastric herbivores

They will eat insects but in the wild they eat a lot of fibrous vegetation as well as seeds. Hence why I'm a believer in offering gerbils lots of plants and leafy greens if you can and also in offering them good quality hay for eating just in case they want it, in addition to their seed mix.

It's unknown whether they absolutely need animal protein or whether it's optional for them but I always feed some anyway.

Omnivore is a very large category and there's lots of variation within it.
