I thought the whole reason stinging nettles sting was to warn herbivores to not eat them but then how come goats and sheep eat them and do they not sting goats and sheep then?

The vast majority of herbivores don't eat nettles. Sheep when really hungry will eat them, also sometimes they seem to build up resistance on their tongue and avoid having them touch their lips. Goats will literally eat anything. So on the whole, the nettles are winning, apart from a couple of species....
